Stellenbosch 2026 Red Edition
There are few places in the wine world quite like Stellenbosch. Nestled between mountain ranges, cooled by Atlantic breezes and blessed with a patchwork of granite, shale and sandstone soils, it produces some of South Africa’s most iconic red wines.
The Paisley Bear Wine Club Stellenbosch 2026 Red Edition is a celebration of the region’s depth, diversity and character. From classic Cabernet Sauvignon and Bordeaux-style blends to powerful Syrah, expressive Malbec and uniquely South African blends, this collection captures the many personalities of Stellenbosch in six remarkable bottles.
These are wines made for winter tables, roaring fires, hearty meals and conversations that become increasingly profound after the second bottle.
Or at least seem profound at the time.
1. Delheim Cabernet Sauvignon 2020
Estate & Terroir
Situated on the slopes of Simonsberg Mountain, Delheim’s vineyards benefit from decomposed granite soils, significant day-night temperature variation, and cooling mountain influences. These conditions create Cabernet Sauvignon with structure, concentration, and remarkable ageing potential.
Nose
Blackcurrant, cassis, cedarwood, tobacco leaf and dark chocolate, layered with subtle notes of fynbos and graphite.
Palate
Rich and beautifully structured with concentrated dark fruit, firm yet polished tannins and elegant oak integration. The finish is long, savoury and distinctly Stellenbosch.
Food Pairing
Beef fillet, slow-roasted lamb shoulder, venison pie, or mature hard cheeses.
Winter Stellenbosch Moment
The braai has migrated from outside to under cover thanks to an incoming cold front. Nobody is admitting defeat, but everyone is standing suspiciously close to the fire.
2. Stark-Condé Stellenbosch Syrah
Estate & Terroir
Produced from vineyards positioned in the cooler Jonkershoek Valley, Stark-Condé benefits from mountain-influenced microclimates that produce Syrah with both power and elegance. Granite-rich soils contribute freshness and precision.
Nose
Blackberry, blueberry, cracked black pepper, violets and smoky spice.
Palate
Silky yet powerful, delivering dark fruit concentration, savoury complexity and beautifully integrated tannins. Classic cool-climate Syrah character with impressive balance.
Food Pairing
Braaied lamb chops, venison, mushroom risotto, or pepper-crusted steak.
Winter Stellenbosch Moment
The weather forecast promised sunshine. Stellenbosch delivered rain, mist, sunshine, wind and hail before lunch. Fortunately, the Syrah was prepared for all of it.
3. Compagniesdrift Cabernet Sauvignon / Merlot 2021
Estate & Terroir
Sourced from Stellenbosch vineyards rooted in decomposed granite soils, this classic blend showcases the region’s ability to produce Bordeaux-inspired wines with both generosity and structure.
Nose
Ripe blackberries, plum, cassis and cedar spice with hints of cocoa and dried herbs.
Palate
The Cabernet provides backbone and structure while the Merlot adds plushness and approachability. Smooth, balanced and wonderfully food friendly.
Food Pairing
Roast beef, cottage pie, beef brisket, or a generous Sunday lunch spread.
Winter Stellenbosch Moment
The table is so full of food that someone has been forced to balance their wine glass on a breadboard.
4. Rustenberg Malbec
Estate & Terroir
One of Stellenbosch’s most historic estates, Rustenberg’s vineyards enjoy the cooling influence of Simonsberg Mountain and well-drained soils that help produce intensely flavoured fruit.
Nose
Black plum, mulberry, dark cherry and violets, complemented by notes of spice and dark cocoa.
Palate
Generous and velvety with ripe fruit concentration, smooth tannins and layers of dark berry flavours. Rich enough for winter yet remarkably elegant.
Food Pairing
Braaied rump steak, beef ribs, lamb shank, or slow-cooked oxtail.
Winter Stellenbosch Moment
That magical moment when the power stays on, the fire is burning perfectly, and everyone agrees this was absolutely the right bottle to open.
5. Eikendal Charisma Red
(48% Shiraz, 39% Petit Verdot, 13% Sangiovese)
Estate & Terroir
Located on the lower slopes of the Helderberg, Eikendal benefits from cooling maritime influences that bring freshness and complexity to this distinctive blend.
Nose
Black cherry, ripe plum, black pepper and dried herbs with floral notes and hints of spice.
Palate
A beautifully layered wine combining the richness of Shiraz, the structure of Petit Verdot and the brightness of Sangiovese. Complex, energetic and endlessly interesting.
Food Pairing
Charcuterie platters, wood-fired pizza, roast lamb, or rich pasta dishes.
Winter Stellenbosch Moment
The bottle everyone keeps returning to because they can’t quite figure out why it’s so delicious. Then somebody reads the blend and it all makes sense.
6. Hidden Valley Hidden Secret
(79% Shiraz, 21% Tannat)
Estate & Terroir
Hidden Valley sits high on the Helderberg slopes overlooking False Bay. The elevated vineyards and cooling ocean breezes help create wines with concentration, freshness and remarkable balance.
Nose
Blackberry, cassis, liquorice, dark chocolate and smoky spice.
Palate
Full-bodied and deeply expressive with powerful dark fruit, structured tannins and impressive depth. The Tannat contributes backbone while the Shiraz brings generosity and richness.
Food Pairing
Braaied beef ribs, game dishes, slow-cooked stews, or a winter potjie shared among friends.
Winter Stellenbosch Moment
The potjie has reached peak perfection. Someone claims they have a secret ingredient. Nobody believes them, but the food is excellent so nobody argues.
